Bread pudding

‘Waste not, want not.’

Our friends have left and Clive has turned the various things that needed using up into a bread pudding.

It’s heavy, spicy and moist; one of the best I’ve ever tasted. Below is his recipe. The quantities are approximate because he ‘follows his nose’.

RECIPE FOR BREAD PUDDING
  • 600g bread (preferably stale)
  • 500g sultanas
  • 400g cake crumbs
  • 500g sugar
  • 250ml single cream
  • 4 eggs
  • 100ml milk
  • 50mg butter
  • 20g ground mixed spice
 All quantities are approximate!
 
Thoroughly grease large pyrex dish
Shred bread into crumbs and small pieces.
Add cake crumbs.
Add sugar.
Add sultanas.
Add ground mixed spice, butter and cream.
Stir together well.
Add milk and eggs and mix really well.
Pour into greased container and pat down into all corners. Level off top.
Cook for about 40 mins until golden brown.
Let cool for about 10 mins and then dust with sugar.
 
 
Be sure to leave plenty of room for it; it’s extremely filling!
